I'm on the same frontier as you with talking to AI in Finnish. I'm so with you on those AI apps being inauthentic conversationalists. So I stopped going down that route.

Rather I ask ChatGPT to correct my Finnish I write to it, and if I don't know a Finnish word, I write the English word in the middle of my Finnish.

ChatGPT writes me back the fully corrected version with my English seamlessly integrated into Finnish. These one-way conversations are quite therapeutic because I can remove any inauthenticity from the equation. And my Finnish comes scary fast from so much output.
